A friend sent me photos of her dinner a few days ago. It consisted of okra, tomatoes, a boiled egg, and bagoong, and it made me crave the same thing.
I got these during my last grocery run. I boiled the egg, blanched the veggies, and enjoyed them with half the rice I saved from my weekly fast food splurge and of course, bagoong.
I used vegan bagoong from Annie’s Kitchen. It’s made from santol, and it was delicious. I’m not vegan, or even vegetarian. I just happen to have a lot of vegan ingredients lying around because I’ll only cook vegetables.
I sent this photo to my friend, who said that sometimes, the simplest meals are the best. I agreed.
